For some there is only one thing to drink with cheese – and that’s wine – but break the rules and try Whisky instead!
Hi my name’s Rebecca Dunphy tucking into one of my favourite Whiskies Talisker 18yr old with some mature Cheddar cheese.
Sometimes a powerful cheese like Cheddar with its aggressive flavours, high acidity and firm fat, can murder a subtle wine. But with whisky there is no fear of that. Both have loud flavours and Whisky has enough weight and alcohol to counter the acidity and emulsify the fats. Talisker in particular has a great affinity with strong cheddar and I have my favourite the 18 year old. A tad expensive, but it’s worth every penny.
Look at the beautiful amber gold colour and the nose is rich and fruity with toffee, orange rind smoke and a seaweed whiff, which is a clue that this is an island whisky, in fact the only Whisky distillery on the Isle of Skye.
Flavours reach every corner of your mouth, and beyond, firing sweet malt flavours, dried fruits, spice and smoke.
I’ve some Wookey Hole Cheddar. Try together and the Whisky seems to almost stretch out the flavours and accentuates the creaminess of the cheese and helps it melt on the palate. Whereas the salty savouriness in the cheese brings out the smoke and the sweet toffee/spice notes.
